EAT | HOMEMADE TARAMASALATA, AND WHITE BEAN SKORDALIA
With summer right around the corner, we've decided to revisit some of our favourite recipes from our last Summer Annual, contributed by our very own food enthusiast, Douk Konstantaras.
TARAMASALATA
INGREDIENTS,
50 grams fish roe
4 slices white bread
1 cup olive oil
juice of 1 lemon
1/4 red grated onion
METHOD,
SOAK the bread in water and squeeze week to remove excess water so that you are left with soggy bread
IN a food processor, add all ingredients and blend
SLOWLY add a steady stream of into the mix until it is completely blended and is a dip like consistency
CONTINUE to add oil for personal taste
SERVE with Greek Pita or Sourdough
WHITE BEAN SKORDALIA
INGREDIENTS,
1 tin organic cannelloni beans
3 cloves garlic
1/2 cup olive oil
1/2 lemon
Pinch of salt
METHOD,
POUND garlic and salt in a mortar and pestle
DRAIN beans and add all ingredients, including garlic, and blend; a stick blender is perfect
BLEND until oil is completely absorbed and the mixture is smooth and creamy
SERVE with Greek Pita or Sourdough
